AVI was the standard capture format for DV and Digital8 camcorders, early digital cameras and Windows screen recorders, and those files often hold the only copy of a family event or a talk. Converting AVI to WAV gives you the soundtrack as plain PCM for cleaning up in Audacity, transcribing, or restoring alongside the digitised video.
DV AVIs store their audio uncompressed already (16-bit at 48 kHz, or 12-bit at 32 kHz on some camcorders), so the WAV reproduces those samples without any lossy step. AVIs from DivX or Xvid encodes usually carry MP3 or AC3 audio instead; the WAV is then a faithful decode of that track.
AVI (Audio Video Interleave): AVI (Audio Video Interleave) is Microsoft's classic container from the early Windows era. It is still recognised by almost every Windows program and older media player, though its files tend to be large. It is best for legacy Windows software and older hardware players.
WAV (Waveform Audio File Format): WAV stores uncompressed PCM audio exactly as it was recorded. It is the standard for audio editing, mastering and archiving, at the cost of large files (about 10 MB per minute of CD-quality stereo). It is best for editing, mastering, DAWs and archiving.
